5 c water

1 tsp lemon pepper

1 tsp cumin 

1 whole chicken 

1 c chopped onion

2 cloves pressed garlic

2 can(s)shoepeg corn, drained or (bag of frozen sweet corn)

2 can(s)chopped green chilis, not drained

4 can(s)great northern beans, not drained

1 tsp cumin

2-3 Tbsp lime juice

Top with:

white tortilla chips

shredded Monterey Jack cheese



1)Cook chicken , in water with lemon pepper and 1 tsp cumin  until chicken is tender. Debone and cut/shread chicken  into small pieces and add back to liquid in pot.

2)Saute 1 cup onion and garlic in olive oil until clear. Add to liquid in pot.

3)Add shoepeg corn, green chilis, great northern beans, 1 tsp cumin, and lime juice. Heat.

4)Serve over white corn tortilla chips and Monterey Jack cheese.
